In the Honey Processing method the coffee is pulped and the mucilage is left untouched. The coffee is then sun-dried with the mucilage on. A more full-bodied, sweeter and less acidity coffee results from this The Honey Process is a more environmentally friendly way of processing coffee since no water is used to wash off the mucilage hence the water sources are not contaminated with the coffee wastewater. Honey coffees are exclusively sun-dried and the drying process takes a longer time than the Fully Washed or Washed coffees since the mucilage needs to be dried first.

Geisha is an ancient and very rare coffee, it is one of the Ethiopia wild coffees. It was found close to the Ethiopian town of Geisha. Geisha coffee is naturally resistant to the Fusarium disease. It is a tall stature plant with thin and slender leaves. The branch points on the main stem are widely spaced. The beans are long and slender. Geisha has about 30% less caffeine content than common Arabica coffees. The yield of Geisha is extremely low which is why is so difficult to find commercial plantations of this coffee.
